This is my favourite winter breakfast at the moment. I think I already mentioned how much I love rice flakes? It's such a great porridge alternative and they're very popular in my home country. They're kind of like the Polish version of Thai sticky rice. We have them for breakfast in Poland but they are actually perfect for desserts too. I'll give you a great hack for the creamiest rice flakes you can imagine: just add 2 tablespoons of creamed coconut (yes the same stuff you would put in your Thai food).
This is literally the simplest breakfast to make. You just have to throw in everything together and cook it on low flame. This creamy coconut heaven will taste absolutely insane with raspberry chia jam. I don't know, there's just something really special about this combination. It's like a healthy dessert for breakfast. I always add a mashed banana to my porridge, it's such a great natural sweetener. So I think you should be sweet enough but if you want more you can add a bit of agave nectar or stevia.
Wow, I get to it this kind of delights for breakfast every day and I have to keep pinching myself. Ingredients
- 1 and 1/2 cup rice flakes
- 2 cups almond milk
- 2 tbsp creamed coconut
- 1 very ripe banana (mashed)
- 1/6 tsp himalayan salt
- for the raspberry chia jam:
- 2 cups frozen raspberries
- 3 tbsp white chia seeds
- 1/2 cup water
- 3 tbsp agave nectar (optional)
Instructions
- To make chia jam: defrost the raspberries in a saucepan on a low light. Add water and chia seeds. Mix well, add the agave nectar or other sweetener of choice and set aside for 10 minutes (chia seeds should expand nicely). Obviously you can use black chia seeds instead of white ones but with white chia seeds your jam will look extra beautiful π
- To make rice flakes: combine all ingredients in a sauce pan, mix well and cook on a low light for 7-10 minutes. Add a bit more milk or water if it gets too dry.
- Your rice flake porridge is ready. Serve with a generous serving of your beautiful chia jam. You can also add some yogurt and more sweetener on top but this is optional. The mashed banana should make your rice flakes sweet enough.
