I think I've already said this but Moroccan food is my second favourite after Indian cuisine. They use a lot of cinnamon and paprika. Carrots and lentils make the best soup combo and when you add all Moroccan spices you'll get the most fragrant and satisfying winter warmer. Adding coconut milk, in the end, is optional but I wouldn't skip this step because it will make the soup extra delicious and creamy. Garnish with chopped fresh parsley and chilli flakes and you're good to go. Serve with your favourite rustic bread. So as I probably mentioned before I am not a fan of completely smooth creams of soup as I don't find them satisfying that much. I prefer my soup a bit chunky. So what I usually do is I blend about 2/3 of the pot in my Vitamix and the remaining 1/3 remains unblended and when you combine both your soup will be nice and thick and it will also have a bit of texture. That's how we like it. Everything goes so well together here. I love Moroccan flavours so much!
