    For those who are not easily impressed: can I interest you in a bowl of hippie-dippy pink pasta? Served on a bed of green salad and with green peas? How about that? Can you guess the secret ingredient?

    If you've got soaked cashews already prepared this is so quick and easy to make. You can have a fun lunch ready in 10 minutes.

    Description

    How to make your pasta pretty and pink? Something for beetroot lovers!


    Ingredients

    Scale
    • 1 cup soaked cashews
    • 1/2 small raw beetroot
    • 1 clove of garlic
    • 2 tsp lemon juice
    • salt and pepper to taste

    Instructions

    1. Pop all the ingredients into a blender and blend until smooth, add salt and pepper to taste.
    2. Mix with your favourite pasta.
