    Purple sweet potato soup - easy vegan recipe

    This vegan purple sweet potato soup is healthy, vibrant, delicious and packed with nutrition and antioxidants. Purple sweet potatoes not only have a gorgeous purple colour but they also offer an impressive array of health benefits and this easy vegan recipe will help you incorporate more purple sweet potatoes into your diet. This gluten-free soup is quick and easy to make - it comes together in under 30 minutes. This is a perfect fuss-free lunch recipe but I also love enjoying this cosy soup wrapped up in a blanket on the sofa in the evening. This purple sweet potato is nutritious, creamy and satisfying. Serve a bowl of this gorgeous vegan comfort food topped with plain dairy-free yoghurt and pair it with your favourite rustic bread.

    Ingredients

    Scale
    • 1 red onion (finely chopped)
    • 3 garlic cloves (finely chopped)
    • 1 inch ginger (peeled and finely chopped)
    • 500 g purple sweet potatoes (peeled and chopped)
    • 1 can butter beans (drained)
    • 2 vegetable stock cubes
    • 1 can of full fat coconut milk
    • 3 cups of water
    • 3/4 tsp himalayan salt (or to taste)
    • 1/2 tsp ground black pepper
    • juice of 1/2 lemon
    • 1 tsp coriander powder
    • 1 tsp cumin powder

    Toppings

    • 1 tsp chilli flakes
    • 4 tbsp fresh coriander (finely chopped)

    Instructions

    1. Finely chop ginger, garlic and onion and fry them in a bit of olive oil until onion softens.
    2. Add all spices and vegetable stock cubes.
    3. Add finely chopped purple sweet potato.
    4. Add butter beans and coconut milk.
    5. Cook on a low light for 30 minutes.
    6. Add lime juice.
    7. Blend with a soup blender or in a jug blender.
    8. Serve topped with a bit of soy yogurt, chilli flakes and chopped fresh coriander. Tastes best with your favourite rustic bread.
