Ingredients
- 1 red onion (finely chopped)
- 3 garlic cloves (finely chopped)
- 1 inch ginger (peeled and finely chopped)
- 500 g purple sweet potatoes (peeled and chopped)
- 1 can butter beans (drained)
- 2 vegetable stock cubes
- 1 can of full fat coconut milk
- 3 cups of water
- 3/4 tsp himalayan salt (or to taste)
- 1/2 tsp ground black pepper
- juice of 1/2 lemon
- 1 tsp coriander powder
- 1 tsp cumin powder
Toppings
- 1 tsp chilli flakes
- 4 tbsp fresh coriander (finely chopped)
Instructions
- Finely chop ginger, garlic and onion and fry them in a bit of olive oil until onion softens.
- Add all spices and vegetable stock cubes.
- Add finely chopped purple sweet potato.
- Add butter beans and coconut milk.
- Cook on a low light for 30 minutes.
- Add lime juice.
- Blend with a soup blender or in a jug blender.
- Serve topped with a bit of soy yogurt, chilli flakes and chopped fresh coriander. Tastes best with your favourite rustic bread.
