    Vegan roasted cauliflower salad - easy vegan recipe

    This easy vegan roasted cauliflower salad will make you fall in love with my favourite vegetable. In this delicious vegan and gluten-free recipe, roasted to perfection, golden turmeric cauliflower pairs well with spiced roasted chickpeas, pomegranate seeds, avocado slices, hemp seeds and lots of nutritionally dense dark leafy greens. Toss everything with simple yet flavourful tahini mustard dressing. This is the ultimate superfood salad - highly nourishing and packed with plant-based protein. This roasted cauliflower salad makes a perfect side dish that goes well with just about anything or you can also enjoy it as a healthy fuss-free lunch meal. This salad is ridiculously easy to whip up, it's vegan and gluten-free.

    I'm feeling amazing by just looking at this. We've got all the healthiest superfoods here. Turmeric cauliflower is super anti-inflammatory, pomegranates are high in antioxidants and hemp seeds high in good fats and protein. Don't get even get me started on my favourite roasted chickpeas and that tahini dressing. You will definitely enjoy this plate of health.

    Ingredients

    Scale
    • 1 small cauliflower
    • 3/4 tsp turmeric powder
    • 1/3 tsp cumin powder
    • 1/3 tsp coriander powder
    • 1/2 tsp garlic powder
    • 1/3 tsp onion powder
    • 1/3 tsp smoked paprika powder
    • 1/2 tsp dijon mustard
    • 4 tbsp olive oil
    • 1/2 avocado
    • 100 g mixed salad leaves (I used a mix of rocket, baby spinach and baby chard)
    • 1/2 cup pomegranate seeds
    • 1/2 cup roasted chickpeas (recipe on the blog)
    • 1 tbsp hemp seeds
    • for the dressing:
    • 2 tbsp tahini
    • 1 tbsp medium hot dijon mustard
    • 1 tsp maple syrup
    • 2 tbsp apple cider vinegar
    • 1 clove of garlic, crushed

    Instructions

    1. Divide cauliflower into small florets, coat with olive oil, mustard, turmeric powder, and the rest of the spices. Roast in the oven at 200 C degrees for about half an hour (until golden and soft).
    2. Combine all salad ingredients: salad leaves, roasted cauliflower, roasted chickpeas and sliced avocado.
    3. Top with hemp seeds and pomegranate seeds.
    4. Mix tahini with mustard, apple cider vinegar, crushed garlic and maple syrup to make a dressing.
