Ingredients
- 1 small cauliflower
- 3/4 tsp turmeric powder
- 1/3 tsp cumin powder
- 1/3 tsp coriander powder
- 1/2 tsp garlic powder
- 1/3 tsp onion powder
- 1/3 tsp smoked paprika powder
- 1/2 tsp dijon mustard
- 4 tbsp olive oil
- 1/2 avocado
- 100 g mixed salad leaves (I used a mix of rocket, baby spinach and baby chard)
- 1/2 cup pomegranate seeds
- 1/2 cup roasted chickpeas (recipe on the blog)
- 1 tbsp hemp seeds
- for the dressing:
- 2 tbsp tahini
- 1 tbsp medium hot dijon mustard
- 1 tsp maple syrup
- 2 tbsp apple cider vinegar
- 1 clove of garlic, crushed
Instructions
- Divide cauliflower into small florets, coat with olive oil, mustard, turmeric powder, and the rest of the spices. Roast in the oven at 200 C degrees for about half an hour (until golden and soft).
- Combine all salad ingredients: salad leaves, roasted cauliflower, roasted chickpeas and sliced avocado.
- Top with hemp seeds and pomegranate seeds.
- Mix tahini with mustard, apple cider vinegar, crushed garlic and maple syrup to make a dressing.
