    Vegan pancakes with stevia - easy vegan breakfast recipe

    These healthy vegan pancakes are refined sugar-free as they are sweetened with stevia and a banana so you can enjoy them practically guilt-free, as often as you like! They are ridiculously easy to make, too! It's a quick and easy dairy-free breakfast. Serve them with your favourite toppings. Happy Pancake Sunday!

    Description

    Sweetened with banana and stevia. Practically guilt free πŸ˜€


    Ingredients

    Scale
    • 1 and 1/2 cup spelt flour
    • 1 and 1/4 cup almond milk
    • 1 very ripe banana (mashed)
    • 1 tsp stevia powder
    • 1 tbsp baking powder
    • 1 tsp apple cider vinegar
    • 1/8 tsp Himalayan salt
    • few drops of vanilla essence
    • toppings:
    • your favourite fruit
    • yoghurt
    • agave nectar or high-quality maple syrup

    Instructions

    1. Combine all dry ingredients in a bowl, add mashed banana, apple cider vinegar, milk and vanilla essence. Mix well until you get pancake batter.
    2. Let it sit for 15 minutes.
    3. Fry ideally on a low light on a non-stick frying pan. Use a bit of coconut oil for frying if necessary.
    4. I use 1/4 cup measuring cup to measure perfect same sized pancakes.
    5. Flip when you see bubbles and fry for 1-2 more minutes. T
    6. op with your favourite fruit and a bit of maple syrup or coconut yogurt.
    7. Should make 10 pancakes.
