My tofu scramble is better than yours! Sorry for this bold statement, but it's true! Just try it, and you'll see what I mean. The secret is all the curry spices, of course. And a few other things. Serve it on toast, as part of a "full English breakfast" or make breakfast tacos with mini tortillas. Enjoy!
Oh, and, if, for some strange reason, you are not a fan of fresh coriander, feel free to add some fresh spinach instead.
This recipe will work without any oil (as long as you don't forget to add the oat milk. Otherwise, your tofu scramble will be awfully dry). However, if you're preparing brunch for your carnivore friend, secretly hoping to convert them to veganism, I would add a bit of coconut oil. I personally always add 1 tbsp of coconut oil to mine.

- firm plain tofu
- tomato
- yellow bell pepper
- oat milk
- turmeric powder
- cumin seeds
- chilli flakes
- coriander powder
- pink Himalayan salt
- fresh coriander
- raw virgin coconut oil

HOW TO MAKE EASY VEGAN TOFU SCRAMBLE
- Mash the tofu with a fork but leave some nice big chunks.
- Chop tomato and pepper and sauce on a low light until they soften.
- Add the mashed tofu.
- Add all the spices and oat milk.
- Cook on a low light for about 5 minutes, stirring occasionally.
- Add more milk if necessary.
- Prior to serving stir in chopped fresh coriander (or you can use spinach instead if you don’t like coriander).

- 150 g firm plain tofu
- 1 to mato
- 1/2 yellow or orange bell pepper
- 1/2 cup oat milk
- 1/2 tsp turmeric powder
- 1/3 tsp cumin seeds
- 1/4 tsp chilli flakes
- 1/4 tsp coriander powder
- salt to taste
- handful of chopped fresh coriander
- optional: 1 tbsp raw virgin coconut oil
