    Greek loaded fries with feta and salad - easy vegan recipe

    These vegan Greek-inspired loaded fries make a perfect BBQ side dish but I also like to enjoy them as a main course summer meal. In this easy vegan and gluten-free recipe, crinkle-cut fries are spiced to perfection with garlic, smoked paprika, oregano and thyme and then oven-baked. Serve them buried under a myriad of healthy Mediterranean-inspired toppings: tangy vegan feta cheese, marinated fresh crunchy salad, black olives, fresh parsley and most importantly, super garlicky yoghurt cumin dip. My kind of summer meal. Serve these vegan loaded fries as a side dish to a Greek-inspired BBQ feast. They can also be enjoyed as a savoury snack and they are great for sharing.

    These vegan Greek-inspired loaded fries make a perfect BBQ side dish but I also like to enjoy them as a main course summer meal. In this easy vegan and gluten-free recipe, crinkle-cut fries are spiced to perfection with garlic, smoked paprika, oregano and thyme and then oven-baked. Serve them buried under a myriad of healthy Mediterranean-inspired toppings: tangy vegan feta cheese, marinated fresh crunchy salad, black olives, fresh parsley and most importantly, super garlicky yoghurt cumin dip. My kind of summer meal. Serve these vegan loaded fries as a side dish to a Greek-inspired BBQ feast. They can also be enjoyed as a savoury snack and they are great for sharing.


    Ingredients

    Scale

    For the spiced fries:

    • 800g crinkle cut fries
    • 1 tsp ground black pepper
    • 2 tsp garlic powder
    • 1 tsp onion powder or granules
    • 3 tsp smoked paprika powder
    • 1 tsp thyme 
    • 1 tsp dry parsley
    • 1 tsp dry oregano
    • 1 tsp pink Himalayan salt
    • sunflower oil

    Toppings:

    • 1 packet of vegan feta (I used Violife), crumbled with a fork
    • 2 tbsp cup fresh parsley, finely chopped
    • 1/3 cup pitted black olives, cut into slices

    Marinated salad:

    • 3 tbsp of fresh, finely chopped parsley
    • 1/3 cucumber, finely chopped
    • 1 red onion, finely chopped
    • 200g cherry tomatoes, each cut in 4
    • 3 tbsp freshly squeezed lemon juice
    • 1 clove of garlic, crushed
    • few tbsp of olive oil
    • 1 tsp dry oregano
    • 1 tsp dry thyme
    • ground black pepper and salt to taste

    For the garlic yoghurt sauce:

    • 1 cup plain unsweetened soy yoghurt
    • 2 tbsp freshly squeezed lemon juice
    • 2 cloves of garlic, crushed
    • 1 tsp cumin powder
    • 2/3 tsp ground black pepper
    • 1/3 tsp pink Himalayan salt

    Instructions

    1. Preheat the oven to 200 degrees C (gas mark 6).
    2. Prepare the spiced fries: season the frozen fries with spices and drizzle with a bit of olive oil or sunflower oil. Toss them in a large mixing bowl to make sure all fries are evenly coated with spices. Divide them into two baking trays and bake in the oven for 30 minutes, until golden and crispy. 
    3. While the fries are cooking in the oven, prepare the yoghurt sauce and the marinated salad. 
    4. To make the yoghurt sauce, simply combine all ingredients in a small bowl and whisk until well combined.
    5. To make the salad: combine all finely chopped veggies and parsley in a salad bowl. Add olive oil, lemon juice, spices and salt and pepper to taste and mix until well combined. 
    6. Crumble the block of vegan feta with a fork and place it in a small bowl.
    7. Prepare the black olives - cut them into rings. 
    8. Assemble your loaded fries: divide them into portions and top with a generous amount of marinated salad, yoghurt sauce, crumbled vegan feta, fresh chopped parsley and black olive slices.
