Hello, mocha lovers! I've got something that might interest you. These mocha pancakes are super easy to make. I just used my plain pancakes recipe and added some vegan mocha protein powder. They tasted great with coconut yogurt on top, some chocolate pieces, and pomegranate seeds. Serve with… a cup of mocha, of course.

Ingredients

- 1 and 1/2 cup spelt flour
- 1 and 1/3 cup almond milk
- 3 soft dates
- 1 very ripe banana (as a sweetener and egg replacement)
- 1 tsp ac vinegar
- 1/8 tsp himalayan salt
- 1 tbsp baking powder
- 3 tbsp vegan mocha/coffee protein powder
- toppings:
- coconut yogurt
- blackberries
- pomegranate seeds
- chocolate chunks.
- optional: agave syrup
Instructions
- Combine all dry ingredients in a bowl.
- Add mashed banana. Blend milk with dates, add to the bowl.
- Add acv.
- Mix well until you get pancake batter.
- Let the batter sit for 15 minutes.
- Fry ideally on a non-stick pan on a low light. My non-stick is very sticky so I used a bit of cooconut oil.
- Measure same sized pancakes with 1/4 cup measuring cup.
- Flip when you see the bubbles .
- They taste great topped with coconut yogurt, pomegranate seeds, blackberries and chocolate pieces. Smother everything in agave nectar if you want.
